No fooling around: it was standing room only for Fondren’s newest restaurant  Friday and Saturday, but as of Monday, April 4, they’re open for business! Fatsumo Sushi, a Gulfport based eatery, opened Tuesday at lunch to sit down service from 11am-2:30pm. Operating partner and chef Scott Meinka says “we did make our target of April 1.”  He added, so far, diners are very pleased. “Our training exercises have gone well. The feedback is that our sushi is bite sized and we have great diversity (in our flavors).”

Fatsumo served sample bites over the weekend of various dishes including edamame, sushi, miso soup, and other delicacies. The restaurant also ran a limited “cash and carry.” Meinka says regular hours will be 11am-2:30pm for lunch, and 5pm-10pm for dinner, and Fridays and Saturdays all day. They will not be open on Sundays or for Monday lunches.
